The outside looks bright red and appealing, while the meat hidden in the middle appears grayish-brown. Your first thought might be that the beef has gone bad or that the store sold you something past its prime. But the truth may be more surprising than you think.

In many cases, this color difference is completely normal and happens because of the way meat reacts with oxygen.

Ground beef contains a natural protein called myoglobin, which helps give meat its characteristic color. When myoglobin comes into contact with oxygen, it produces the bright red appearance commonly associated with fresh beef. This is why the outer surface of ground beef often looks red when you open a package.

However, the situation is different inside the package. The meat in the center receives much less oxygen, which can cause it to appear grayish-brown instead. When the beef is exposed to oxygen, its color may gradually change again.

This means that finding gray meat beneath a red outer layer does not automatically indicate that the beef is spoiled. Sometimes, it is simply a natural result of how oxygen reaches different parts of the meat.

Nevertheless, there is an important detail every shopper should understand: color alone cannot tell you whether ground beef is safe to eat.

Spoiled beef may develop an unpleasant, sour, or rotten smell. Its texture may also become unusually sticky or slimy. Damaged packaging, leaking juices, or meat that has been stored at an unsafe temperature can raise additional concerns.

Proper storage is especially important because harmful bacteria can grow in ground beef even when the meat still looks and smells normal. Refrigerate raw ground beef promptly, and cook it to an internal temperature of 160°F (71°C), measured with a food thermometer.

If the beef has been left unrefrigerated for too long, has clear signs of spoilage, or you are unsure whether it was stored safely, the safest decision is to throw it away. Cooking cannot reliably make spoiled meat safe.

The bottom line? Grayish-brown ground beef in the middle is not necessarily a reason to panic. It may simply reflect a lack of oxygen. What matters most is how the meat was stored, how long it has been kept, and whether there are other signs that something is wrong.

You open a package of ground beef, expecting to see fresh red meat, but something catches your attention.
